One Pot Spanish Rice ($10 per recipe)

This Spanish rice reicpe is one of my parents’ staples. They make it at least once a month, and it feeds them for dinner for nearly the entire work week (Monday to Friday).

Cost Breakdown

The cost analysis is based off of prices on the Loblaws website, as of January 2023, and are localized to Toronto, Canada. I calculate the cost of the ingredients as if I bought a mix of house brand products (in this case: No Name), and brand name products. . All prices are in Canadian dollars.

Cost for the recipe: $10.71. And remember: this can be your dinner for a week!

Ingredient Costs

Vegetable oil: 0.63/100ml
Bag of onions: 0.22/100g
Garlic: 43 cents per bulb
Yves Veggie Ground Round: 6.99 per pack
Rose Brand jasmine rice: 0.37/100g
No Name crushed tomatoes: 1.49 per can
Patak’s curry paste: 2.29/100ml

Ingredients

  • 1/4 cup vegetable oil

  • 1 small onion, diced

  • 3 cloves minced garlic

  • 1 package Yves veggie ground round

  • 1 1/2 cups uncooked white rice (make sure to wash it!)

  • 2 cups water

  • 1 can crushed or diced tomatoes (28 liquid ounces or 792 mL)

  • 1 tbsp curry paste (I like Patak’s curry paste)

Directions

  1. Dice the onion and mince the garlic.

  2. Heat vegetable oil in a skillet over medium heat. Stir in the onion and garlic and cook for 5 minutes until translucent.

  3. Wash the rice in cold water for about 30 seconds, then drain it.

  4. Stir in the veggie ground round, rice, water, tomato sauce, and curry paste.

  5. Bring to a boil, while stirring occasionally.

  6. Give it a good stir to get everything off the bottom, and then reduce to low heat.

  7. Simmer until rice is tender and the liquid has been absorbed, which should take about 20 minutes.

  8. Enjoy!
